  • 300g spelt flour

  • 100g almond meal

  • 60g sugar-coated almonds (chopped)

  • 200ml almond milk

  • 50g coconut oil

  • 50g sugar

  • 2g salt (or less)

  • 7g dried yeast

  • 15g ground sesame seeds

     

Per bun (estimated):

  • Calcium: 108 mg

  • Magnesium: 63 mg

  • Potassium: 103 mg

  • Sodium: 82 mg

  • Sway Factor Score: 92.6 💖

     

🍞 How to make them:

  1. Warm almond milk slightly and mix with yeast and a teaspoon of sugar. Let sit for 5–10 minutes until frothy.

  2. In a large bowl, combine spelt flour, almond meal, sesame seeds, and sugar.

  3. Add the yeast mixture, coconut oil, and salt. Mix into a dough.

  4. Fold in chopped sugar-coated almonds and knead until smooth.

  5. Cover and let rise for 1 hour until doubled.

  6. Divide into 12 buns, place on a lined tray, and let rise again for 30 mins.

  7. Bake at 180°C (350°F) for 20–25 minutes until golden brown.
